Organic Status: Organic Philosophy

Harvested in the cool of the morning and protectively handled using nitrogen to exclude oxygen. The fruit was chilled, de-stemmed, crushed and gently pressed. Handling was kept to a minimum to reduce oxygen uptake, helping preserve the vibrant fruit character. The juice was cold settled then run off to stainless steel tank for a slow and cool (14C) fermentation with selected yeast that lasted 28 days. The wine was stabilised over the next 8 weeks then bottled.
Tasting Note
Pale lemon coloured, the nose is powerful and exotic, with gooseberry, passion fruit and elderflower notes. The palate is medium to full bodied, with very intense tropical fruit blending with greener notes of capsicum.  The finish is ripe, crisp and long.
