For three generations, the Cantele family have been making wines in the Salento peninsula of Puglia. Having originally come from northern Italy, Giovanni Battista and his wife Teresa Manara decided to move to Salento and establish a winery in the late 1950s, the area provides ideal growing conditions. Long, sunny days and cooling sea breezes sweeping in from the Adriatic and Ionian seas have led to the production of wines which are rich, ripe and beautifully balanced.

Grapes
100% Bombino Bianco
Harvested in early September from vines trained in the Goyot style.

Vinification
The grapes are de-stemmed and crushed and pressed in a soft way.  The must obtained is cooled to 10 degress celsius to allow natural clarification.  The alcohol fermentation takes place in stainless steel tanks and the temperature is continuously kept below 15 degrees celsius.  Maturation takes place in stainless steel tanks.

Style and Maturity
Faint straw yellow with slight greenish reflections.
On the nose a large and lively olfactory impact.  Fruity perfumes with subtle apple and tropical fruit fragrances.
On the palate fresh, fruity and mellow, a good balance between acidity and volume with an aromatic end.
Food Pairing
Excellent and an aperitif, a worthy companion of fresh seafood dishes. light fried fish, vegetables, and soft cheeses.
