This champagne was blended from four villages, all Premier and Grand cru, (Chouilly, Avize, Cumières et Le Mesnil sur Oger.) The 2004 Blanc de Blancs is the result of a harvest producing sound and healthy grapes with good ripeness. The sugar-acid levels produced musts that were well balanced with good aromatic characters of a style more floral and fruity than mineral. Claude Dervin, the Chef de Cave, proceeded with the first fermentation in small temperature-controlled vats, as normal, keeping the different elements separate. The second fermentation in the cellars was followed by ageing for at least 5 years. Underpinned by good acidity this cuvée promises good keeping potential.

The elegance and distinction of this cuvée is launched by the pale gold colour and train of beautiful effervescence. The nose is complex, with a bouquet of flowers, notably hawthorn, acacia and honeysuckle, over ripe pineapple and grapefruit, followed by notes of patisserie and some lime flower with some characters of tea and caramel. On the palate, the champagne shows plenty of elegant attack, with the acacia and pineapple giving way to brioche and soft bready elements. The finish is long and harmonious dominated by the touch of lemon characteristic of top Blanc de Blancs champagnes.

This Blanc de Blancs 2004 has a tremendous personality held together by a fine acid backbone and a rich aromatic element that makes it a truly great aperitif style to be enjoyed by itself. The richness of the fruit makes it a perfect partner for special meals such as mille feuilles of crab, crisp prawns in curry with mango chutney, or a pair of quail in vine leaves roasted in honey and thyme, or a gateau financier with pears. This vintage will repay keeping – the rich elegance will be enjoyable for at least the next 6-8 years.
