The careful selection of varieties has produced a wine that combines the elegance of cool climate Denmark Merlot with the richness of Mount Barker Shiraz. The individual batches were fremented in small open fermenters and then matured in a mixture of new and older French and American oak Barriques. Following nine months in oak the wines were carefully blended and returned to barrel for a further six months prior to bottling.
