Terroir
The vineyards from the territory of Collioure are situated at
the extreme south of France, where the Pyrenees meet the
Mediterranean. The vines grow on terraces built on steep
slopes of arid schist. They define the whole landscape from the
seashore to the deepest valleys of the region.

This wine was a “Coup de coeur” from the winemaker. Made
with a selection of Black Grenache and Carignan from the
oldest vines of the vineyards. The deep intensity of the fruit
makes this a wine of pleasure.

Black Grenache : 90 %
Carignan : 10 %
Average yield per hectare : 26 hl 
 
Vinification
Hand harvested at the beginning of September 2007,
from pre-selected parcels of vines whith hand sorting and
cleaning. A traditional fermentation with 20 days of maceration.

Ageing
Aged entirely in stainless steel for an emphasis on the fruit and
the freshness.
 
Tasting
Colour : Black granite.

Bouquet : Strawberries, blackberries, and Grenache with small notes of liquorice.

Taste : A full attack, harmonious and aromatique, in which black and red berries mix.
