100% Shiraz

Low yielding shiraz vines produced the grapes for this exciting, well structured wine. The wine is a blend of grapes grown in the distinctive sandy soils of the McLaren Vale north east and the gilgai clay sub soil of the south west.

Crushed and fermented in 4 tonne open fermentors, three pump overs per day and allowed to stay on skins for 6 days – basket pressed with all pressings blended back with the free run juice. A portion of the wine was barrel fermented in 2nd year American oak hogsheads. Once fermented dry, the total wine was matured in 2nd year American hogsheads for 10 months.

Winemaker's Tasting Note
Medium intensity of purple and red with a ruby edge. Exciting peppery spices leap out of the glass followed by luscious, sweet berry fruit on the nose. Careful use of oak imparts lingering vanillin and toasty notes. Soft approachable tannins are balanced by sweet fruit and toasty oak flavours. Plum and cherry flavours and the long, soft dusty tannins combine to make a warm, rich yet balanced elegant wine
Serving Suggestions
Serve with rich red meats, steaks, game, casseroles and stews. Also good with mature hard cheeses.
